We are getting into the home stretch to the beginning of the school year. I have so much I want to get done before then. I started the closets (stay tuned for before and after pictures), and ran out of hangers. I also made a bigger mess than when I started, so I took a break from that since it was making me nuts. I need to revamp my dining room for two reasons. We currently do not have enough space or chairs for all 6 of us to sit at the table, and I need some shelving to better organize school and craft supplies since that is where we use them. I have been searching pinterest for some ideas on how to best organize the space and make it more usable. So stay tuned for some before and after pictures of that too. I have a lot to do and not a lot of time to do it, so please forgive me for not posting the recipes I have been trying out for dinner. Maybe I will try to do a weekly meal round up to share all the yummy things we have been trying out. I am also thinking about trying some things like Plated or Blue Apron to share with you, and maybe some like Kiwi Crate for the kids, and Ipsy for myself. So watch for that too!!
Dinner has been so frustrating the past couple weeks. Chicken wing has decided that no matter what I make, he isn’t going to eat it. It’s “too sour”, or it looks weird, or it’s “too green.” After I do all the dishes, clean up, and put everything away; he comes downstairs and asks for something to eat. I found myself telling him he wasn’t allowed to eat an apple because he didn’t eat his dinner. I don’t typically have picky kids. Little Pig thinks he is a snake and just doesn’t eat. I am lucky to get a full meal in him every day. None of the Stinkbutts will sit still very long either. This is also making me crazy. I put dinner on the table, and they all start jumping up and running all over the place. I wish I could figure out how to get all the kids to sit still and eat their dinner. Instead we have a circus every night! Sigh….
For dinner tonight we are had yet another recipe I found through Pinterest, this one is on Skinnytaste.com. Taco Stuffed Zucchini Boats! I am hoping the super fun name will be enough to convince the Stinkbutts to try it. For this recipe you had to scoop the insides out of some zucchini, and then stuff it with a yummy turkey filling. As an added bonus, you didn’t use all of the insides, so I was able to steam the left overs and make something that Meatball could eat. I also saved her some of the ground turkey before adding all the spices.
This recipe was a success! None of he older Stinkbutts turned their noses up. They all sat down and ate! I think this is a really good lower calorie alternation to regular tacos! I will be making this again!!!
My husband and I love Chinese food, but since we are both trying to lose weight we haven’t had any for a while. Last week I came across a recipe for General Tso’s chicken on Pinterest and decided to give it a shot. Unlike the restaurant version, this recipe does not include batter dipped, deep fried chicken. The sauce is also not so thick and sticky like the restaurant version. It did satisfy my craving for some Chinese food with A LOT less calories. I forgot to take pictures, but mine ended up looking just like the pictures on the original post. I did cut back the amount of Splenda that recipe called for, I only used about 2 tablespoons instead of a half of a cup, and it was still nice and sweet. On Monday we decided to take a mini vacation, and take the Stinkbutts to the beach. This was the first time Meatball has been to the beach. Chicken Wing, Little Pig, and Ginger Snap all got to go last year. They were all afraid to go near water at first, but by the end of the day, Little Pig was becoming pretty brave. Ginger Snap decided that she was way to cool to hang with us, and took her towel to go sunbath near some boys. That girl is 2 going on 20! We are in trouble! LOL!
We are one month out from Chicken Wing’s first day back to school. So this week I am going to start cleaning out closets, and organizing clothing. I am thinking the best way to do this is to sort everything by size. I am ordering size separators for the boy’s and girl’s closets this week. I am also ordering some hanging shelves to use to get clothes ready at the beginning of each week (an idea I saw on Pinterest at some point). I am going to take some before and after photos, and hopefully they will look beautiful!!!
I have some fun and healthy recipes to try out this week. I am going to order on of those kitchen gadgets that turns vegetables into pasta, and will hopefully be able to share how that works with you all. I am hoping it will be a way to stretch a serving of pasta and to sneak some extra veggies into the stinkbutts.
Ginger Snap is going to her first big girl bed. So far, she has spent more time in my bed then hers. Hopefully, it will get easier. Fingers crossed!!!
Before any of that, we have decided to take a mini vacation to the Jersey shore. First thing tomorrow morning we are headed to the beach! I am also planning on a quick trip to IKEA since I don’t have one any where near me, and I just love it!!!!

I was going to post our dinner again tonight, but I just plain forgot. Having four kids sometimes makes your brain just quit working. I made another skinnyms.com recipe, Slow Cooker Balsamic Chicken. If you want to give it a try here is the link:
Dad Stinkbutt is an air traffic controller, so he doesn’t work a typical 9-5 schedule. That means that often times I am left to hold down the fort alone for a good chunk of the day. Since its summer, that means all 4 Stinkbutts are here. I have spent most of today attempting to make our living room presentable, and get the floor vacuumed good enough that I don’t have to worry about meatball putting something in her mouth. I was just about there, I almost had EVERY toy put away. There must be an alarm in their room saying “mom cleaned!” I just barely vacuumed, and here come three tornados of toys swirling around my living room. In about 2 minutes, you couldn’t even tell I had cleaned.
I tried to put Meat Ball and Ginger Snap down for naps. Little pig sticks his head downstairs and mumbles something about Meatball napping in his room. I didn’t think much of it, until I head an adorable little squeal at the top of the stairs. The boys had some how managed to get her out of bed and turn her loose. So nap time was a big failure!
So we get to dinner time. My boys are not typically picky eaters. Little Pig does average about one meal a day, but will eat just about anything at that meal. The past several days dinner time has me wanting to pull my hair out! Those two refuse to come downstairs to eat. When I do get them to finally come downstairs, they check out their plates, and tell me it’s too hot and needs to cool off. Then the wander off until I call them back. Now suddenly Chicken Wing isn’t hungry, has a tummy ache, has a headache, etc… and just can’t possibly eat his dinner. Little Pig does EVERYTHING Chicken Wing does, so they once again wander off. Then they wait. They wait to hear me clean up the dishes and start the dishwasher. This is followed but a stampede down the stairs, and two little boys suddenly starving and offering to eat just cereal since their dinner is gone. Tonight they are going to be surprised because they will be seeing their plates that I put in the refrigerator. If they decide to be stubborn enough to not eat dinner tonight, then they may just see balsamic dinner for breakfast in the morning. I am so frustrated!
So it was just me and the girls having dinner at the table tonight. Meatball decides to do her normal, “mom is eating so I must scream my head off” routine. I distract her with some cherries long enough to start eating, and that’s when Ginger Snap announces “POOP” and whips of her poopy diaper and takes off! My boys were rather late potty trainers. Everything clicked right after their 4th birthday’s, and they never looked back. I am not used to a 2 year old who wants to use the potty. She shows a lot of signs that she is ready, but just isn’t quite there yet. She mostly announces she has to poop and takes off all her clothes. Fortunately, she doesn’t normally have actual poop in them. Now its about time to start baths, and since we didn’t really nap today, I expect it to be filled with a lot of screaming and “no ducky!!” At least I have dinner ready and in the crock pot this morning while Dad Stinkbutt was still here. Trying to cook with 4 kids and two dogs under my feet tonight would not have been pretty!!! Since it has been a rough day, here are some pictures of them being adorable!
